• 500g diced chicken breast
  • 2 cups brown rice
  • Lots of green veggies

For the sauce

  • 1/2 cup light soy sauce
  • 1/2 cup pineapple juice
  • 1 tbsp honey
  • 1 tspn ground ginge
  • 1 tbsp corn flour
  • 1 cup water


Cook the chicken in a hot pan for 6-8 minutes (or until cooked through). Mix all the sauce ingredients together. Remove the chicken from the pan, reduce the heat and add the sauce. Heat for approx 2 mins. Add the chicken and stir for another 2-3 minutes.

Whilst all that was happening boil your rice and steam your veggies.

Split the chicken between two, serve with your veggies and 3/4 spoonfuls of rice.
