• 1 pepper
  • 1 diced chicken breast
  • 1/2 tin drained chickpeas
  • 1 cup frozen peas
  • 1 tspn red Thai curry paste
  • Salt & pepper
  • Sprinkle on grated cheese


Slice your pepper in half and remove the core & seeds. Mix the other ingredients except for the cheese. Spoon the mixture between the peppers. Sprinkle the cheese sparingly over the peppers. Pop into the over at approx 180 degrees for 20 minutes. Enjoy immediately or another time with a fresh salad. Save time by batch cooking and double up the ingredients. This recipe serves 1.
