Ingredients

  • 4 Salmon Fillets
  • 2 chopped courgettes
  • 1 chopped red pepper
  • 1 chopped orange pepper
  • 12-14 cherry tomatoes
  • tomatoes on the vine
  • ½ lemon
  • Salt & Pepper

Recipe:

Add all the vegetable ingredients to an overproof tray. Pop into a pre-heated oven at approx. 200degrees. Cook for 15-20 minutes. REmove from the oven, Add the Salmon fillets and return to the oven for a further 15- 20minutes or until salmon is cooked through.

This makes 4 servings
