• 2 Eggs
  • ½ poached Salmon fillet or 1/2 tin salmon
  • Tomatoes
  • Cucumber
  • Red pepper


Beat the eggs, add a little seasoning and add to an oiled hot pan. Cook for a few minutes until the bottom is cooked, flake the salmon fillet onto the omellette, flip half over and cook until all cooked through. Serve immediately or save in the fridge for another time.
