Ingredients

  • 1 handful cooled cooked pasta
  • Large handful spinach & rocket
  • 1/2 pack king prawns
  • Diced celery
  • Diced cucumber 1 Tbsp Skye 0% fat yoghurt
  • 1 Tsp green pesto
  • Squeeze of half a lemon
  • Chopped basil
  • Chopped parsley

Method:

Mix the yoghurt, pesto, lemon, basil & parsley. Next add the other ingredients. Use the spinach & rocket as the base. Top with the pasta & prawn mix. Serves 1.
